I use potting compost for my frog, he is a terrestrial frog and needs only a water dish. I also have quite a few plants growing in the tank along with earthworms in the soil to help keep it fresh.
None, substrates are too much of a pain to keep clean.
Coir (coconut fiber products)
Fir Bark
Cypress Bark

Sand
Gravel
Moss: temperate, tropical, sphagnum, peat (Please comment in thread!)
ABG Mix (Ron Gagliardo's mix that he developed at the Atlanta Botanical Gardens)
