I would suggest picking up a book on Pac Man Frogs. A ten gallon is fine, but you could always put him inside a small container with no substrate for feedings, then remove him when he is done. You could also feed him by hand with forceps. As I said, a warm frog will eat better. Try feeding him in the evening or at night, as they are nocturnal. A warm misting will wake them up to eat.
I prefer Moss to coconut fiber, cause the coconut fiber makes them look all dirty.
A baby should eat about every day to every other day, usually about 2-3 medium/large crickets. As adults they only need to eat once or twice a week, and mice I would only feed a few times a year.
