Just an update:
I moved Ganesh to the ten gallon tank that has a hide, fake plants, and a very large, shallow water dish. He burrowed right away and seemed happy. Then, because in the past he had eaten crickets, I got some large crickets and put them in. He scarfed them down. He seems to be happy. I have a heat lamp on him that is very gentle and keeps the tank about 80 degrees, and he is being misted about three times a day (I live in Colorado, keeping humidity requires misting very often). All in all, he seems happy and is eating

Thanks everyone for the tips and suggestions!
