and i was wondering how I can make my pacman frog as big as possible
I've been wanting to fatten mine up after seeing this photo

is there anyway to make my frog this big? (while keeping her healthy)
Just feed him/her like normal. As long as they stay appropriately fat and keep eating they are going to get to about their maximum size. It really has more to do with genetics than what or how much you feed them.

Also, that picture is an Ornate Horned Frog, one of the largest of the horned frog family. The common pet store horned frog is typically the Cranwelli species, about average, are you sure it's that species?
Roaches will get you about the same results as crickets, nightcrawlers, or storebought pacman food. So any of the normal staple foods. It's not about what you feed them, so long as it's an appropriate diet, it's about how big their genetics will allow them to get.
If you have a cranwelli there's no way it will get as big as the ornata in the picture.

It isn't a great photo, but it looks like a Cranwelli species
Cranwelli.
An Ornata will have a false eye spot behind each eye. If you look at the recent thread from Grabius there is picture showing where the spots will be located, and his is an Ornata 100%
