Obviously these frogs are naturally fat, but the fatty deposit could well sorround her eye impairing her vision. I have seen cases of "over-weight" pacmans, that their eyes have so much fat around it(I saw this in a petstore once a few years ago), that the frog cant see very well or at all. Its also not too good for them for that matter.
    I'll stick to your plan about feeding her 2 roaches every second day, dust once and try variation of the food intake once in a while but preferred, once every week.

    I usually just feed nightcrawlers as a staple to the pacman but I think the concept is the same. To tell that I've fed enough for that day, I wait for my pacman to swallow after he eats this worm. If he swallows fast like it's nothing, I feed another worm, if he swallows and then a little later moves his stomach to make room for more, that's when I know he's had enough and that usually does take about 15 minutes. He will bury himself right after and then comes back up to the surface and that's when I feed him again. That's about the frequency that you should feed him at. Just make sure that his width is not larger than his length because that means he's over weight and vice versa. Your pacman should be like a round circle or close to it. So just monitor it and make changes as needed.

    I think feeding mice is important because it gives you frogs some added nutrients that are missing in his staple. I feed mice after my frog poops because that's when he has the most room in his stomach and I don't want to risk impaction.
