I find I get more attention during feeding time if I'm wearing a thong.
Sorry, couldn't resist that...but I can maybe add something useful here. If the crickets are too fast, you could try being a little mean to the crickets and popping them in the freezer for 30-60seconds, enough to slow them down to a crawl but not enough to kill them. Then drop them in front of the frog. As they warm up and slowly start to move, they are easy prey. I don't have a pacman, but I've used this method on gray treefrogs when I was concerned a specific one wasn't getting it's fill due to being a less skillful hunter than it's tank mates.
If you're finding the humidity is too low, you might consider a false bottom for your tank. I don't know if these are often used with pacman frogs, but it makes it so much easier to keep the soil damp but not a soggy swamp.
