I collected some moss off a rock today in the woods. I soaked it for a little bit, then dried it out. I'm going to freeze it for a couple days.
Should this be enough to kill any insects (spiders, millipedes, centipedes etc) or any harmful critters in the moss?

The moss should be safe after the freezing procedures and soaking. The moss may die off for a few months and may need to be conditioned. After collecting moss out in the woods, ive found that buying tropical moss is much better. Im pretty sure Josh's frogs sells a gallon of tropical moss for $5-$10. Don't worry about the moss if it dies off.
