Judging by how bright that tank looks i'd say your suspicions are correct.

Only uncover his head then offer food. Make sure any light is very low when you're offering food. They are nocturnal and are almost alway only active at night. Humidity can also be an issue with lights that bright.

Your probe is also in a bad place. It should be 2" above the substrate in the middle of the back wall of the tank.
