You can remove water from the tank using a piece of aquarium airline tubing and siphoning it out. Out a valve on the end and you can keep the suction as long as there is water in the tank. Just close the valve when you have enough water out, then open again when you have to drain again.

Unfortunately, crickets are simplex creatures, without complex brains, so they don't know any better. You can feed in a glass bowl about 2-3" high and the crickets cannot get out of the bowl. Takes the frogs a bit to get used to eating from the bowl, but most get the hang of it pretty quickly.
