He's eating like a tank and is really healthy with little to no stress. His temps and humidity are good! I just don't know if his color is supposed to change so fast!!!

They get brighter or duller depending on their surroundings. Buried in brown cocofiber, they will tend to be duller. That's one reason breeders take them out and soak them before taking photographs on white paper towels.
I have a WTF that goes from brown to bright green within a few minutes based on whether he's sitting on his tree or sticking to the tank wall.
There can be health things that cause color change (like stress), but it sounds like your frog is fine...

FROG changes colors. I think it has to do with their surroundings,temperature,humidity and such. Frog can be as "bright" as can be and other times he is rather drap colored.
Wow! I don't know if he's healthy or not but if he still eats well and seems ok... then he's probably just amazing at changing colors and camoflauging!
Dang, now I want one of these guys too.. I gotta get off this forum.
