When a frog is shedding they do eat most of it but sometimes you can see bits stuck on what ever they are sitting on at the time. I see bits on the glass every now and then. If Frogs are unwell they tend to stop eating (unless they are hibernating) so that's a good indication that something might be wrong. It looks to me like your doing a wonderful job looking after him. He looks very healthy.
