I'm not sure how this would go over with your mom if she has such a hard time with reptiles, but here's a suggestion. These tarantulas grow fast and they eat like horses after they get a little size on 'em. They reach a pretty impressive size and like all tarantulas they're so low-maintenance it's not even funny. I'd look for one that's maybe 2" or more in legspan.
