I have the book by Taylor David. He recommends spagnum moss and reptile carpet as a substrate not Eco-earth.

Well, I guess Taylor David is wrong in my book. I'd be far more worried about my frog ingesting a piece of moss then some chunks of eco-earth. At first I thought it might have been an old copy, but I see it has recently been released, but keep in mind, knowledge is growing faster and faster on our pets, just because something was okay a few months ago, doesn't mean it is today.
It only molds if poorly maintained. At least once per week it should be mixed up and misted to remoisten the substrate and prevent mold. Most mold that grows on Eco Earth is harmless. The white mold feeds on decaying matter. Just remove the mold and keep the soil mixed up well.
