I have a fern attached to the jade buddah in the tank, which I thought was quite clever.
I planted water sprite (indian fern) in my african clawed frog tank. It did not grow well and actually was rather anemic when floating but once planted it basically took over the tank. The frogs really like it, it provides a ton of cover.

Valisineria grows really fast too in my tanks, I remove a lot of it every few months because it grows so quickly.

Though it doesn't provide foliage I do like duckweed a lot. You have to remove it constantly and yes it can be messy but it does provide a lot of cover for the frogs and it is really awesome at keeping your water chemistry in balance. I don't think I've ever measured over 10ppm of nitrate in my tank ever since I added all the plants, they do a great job of sucking up nitrates.
