Hi Michelle,
Your white's sounds like a cutie!

1. He was a nice bright green at the pet store but since I've had him he has stayed grayish/olive colored most of the time, but does occasionally brighten up. What can cause the poor color and how do I improve it.
Not sure what would cause a drastic change in his color. Stress from the move and still adjusting? Perhaps add more color to the tank? Although my white's is always a dark olive color, even though he has tons of plants. You may want to try introducing a full spectrum bulb if you don't have one?

2. He is super shy. I only ever see him after his light's been off for at least a half hour or if I take him out from hiding to feed him (he is eating great though!).
Shy is normal, he is in a new place. My white's is only awake when lights are out. Why do you take him out of hiding for feeding? In my opinion, not necessary and may be causing additional stress. It's good he's eating, though! A white's with no appetite is cause for concern.

3. Speaking of eating, how much and how often should a frog of that size and age be eating? He's a bit younger and smaller than Glurmo and I read so much conflicting info on this.
Feed him every day, about 3 appropriate sized crickets. Also, try offering night crawlers cut to size. Don't forget to dust with calcium and with a multi vitamin (calcium about 2-3 x / week, vitamins once per week).

4. Just today I've noticed that he's been burrowing in the substrate right next to the UTH. I have one on the bottom and one on the side AND an incandescent bulb because the UTH's only work at like half capacity (Junk lol). The humidity according to my analog hydrometer is around 60-70% and the daytime temp is about 82. Why on earth is he burrowing??
Your hygrometer may need to be calibrated. Search the forum for how to do that. It's not uncommon for them to be completely wrong. White's burrow, usually because they need more humidity.

5. And more of an opinion question: If he's that shy should I just leave him alone or should I try to work with him a little so he can be as chill as Glurmo. I thought Glurmo was sick when I first got him because he's so mellow, but this guy is always wound up.
I have not handled my white's tree frog in over 11 months. But, he is hand fed, and very social. I feed him at the same time every night (about an hour after lights out). I go in with a very dim light, hold a cricket or worm in front of his nose, and he gobbles it up. I never pick him up, pry him out of hiding. When a frog is handled, it causes stress. They fear being eaten or squished. I would let him be, and perhaps use the glass bowl feeding method. Let him become adjusted to the new environment. and consider moving him to an even quieter area of the house, or if that is not possible, cover at least 3 sides of his cage (not the top, of course).
