Night crawler feeding amount?

They are pretty good at regulating their food intake and Night Crawlers are way more nutritious than crickets that are gut loaded. That sounds like a good amount to me. You can always offer a third piece and if he takes it, fine and if not then that's fine too. Just give him what he wants each night.

well my frog ate 4 pieces of night crawlers and 1 cricket last night, he almost ate an entire night crawler, I am not sure why his appetite is varying so much. Could this be the start of a growth spurt?

Possibly. Their appetite will also vary from day to day too and won't always eat the same amount.
