What are some toad species that are more active during the day? I had an American Toad that was always active, but I have some Southern Toads now that always burrow. I never see them, even at night.

Well, I always thought most Toads burrowed anyway.
But as for active, some say the Bufo Marinus is pretty active for a toad. It's Nocturnal and Diurnal, although I'm not sure how they act in captivity, because I don't have one. They probably can become active during the Day, but then when would they sleep?
They're supposed to be very Tame and tolerant of handling [even though their bufotennin is quite potent] and come to recognize their owners.
Plus they're quite hardy, so illness is not something you would have to worry about. The only thing is, that they're very large. Females reaching about 9inches. So you would need a fairly large tank to house even one.
They burrow too though, but only when it's cold. Their temperature preferences are tropical / subtropical, so cold weather is something they detest very much.
Do not get a Bufo Marinus if you want a active toad. They are extremely skiddish and will hide from you every chance they get.
I have 3 California Toads. Most toads are pretty skittish, but I've found these guys are a little calmer. Usually at least one of them is out and hopping around (I have 3). I also like them because they're a decent size...not too big or too small. Check them out!
I never pegged them to be skittish. The wild ones we have here, you can walk right up to one and scoop it up. You can find them out by the trash and they won't even hop away, atleast not right away.
Usually most animals become skittish from stress or are naturally inclined towards stress. I can't say for your toads, but the ones here act like they're lions..
