My frog tried to estivate and is currently soaking. How much if at all should I help her in removing the skin? Can I harm her by doing so?
As long as her tanks humidity levels are fine then you shouldn't help her at all. she will remove it all by herself.
They shed often.

What are the humidity levels in the tank?
I wouldn't mess with her. If the old skin is sticking to the new skin, pulling it off too quickly could cause issues.
Listen to Don and DV. You can stress your frog out by trying to assist and her skin under the shed will be very sensitive. Let your frog do the work.
