Only wild harvested bullfrogs are good. Resturant ones are usually store bought, and store bought is usually farmed. Farmed frogs are fed high fat diets and grown as big and as fast as possible. They taste awful and are dripping with fat.
Wild frog is very lean. When cooked it's kinda like a fish, but it doesn't "crumble" like fish does. Think of a wetter version of chicken, but not as dense :P It's a light watery meat. The legs are really good sauteed in butter & garlic, or breaded & fried, or the best (in my opinion) is basted with BBQ sauce and grilled or smoked.
