That does sound like shedding. Check the corners of the mouth for bunched up skin the next time this happens. They swallow the shed to recycle nutrients, this is why the mouth opens and closes a bunch of times. The wriggling is to help loosen the skin. Another sign is a shiny looking clean frog after the process is finished.
