With that size tank you are not limited on types of plants. Go to the Lowes Indoor plant section and start looking for some tall big leafed plants. I certainly hope the tank opens from the front or it would be impossible to setup. Is is a glass terrarium? What type of background are you going to do? I can't even imagine how many Great Stuff cans that would take.
