I have had two American Toads for six months now and about a month ago one of them stopped eating. He will acknowledge the food I put in front of him, but won't try to catch it. He hides under his log all the time and tends to bury only his head. If I put him in his water bowl, he sits there for about half an hour before moving, but when I put him in front of the bowl I use for feeding, he ignores the worm offered and goes right back under his log. He's lost a lot of weight, so two days ago I started force feeding him. However, today he refused to swallow and just held the bugs in his mouth until I put him back, then spit them out.

Could just be a winter shut down
Are you using any lighting over the enclosure to maintain an active day and night cycle?

I have a bulb in the lid of the tank (which also helps maintain good temperature) and it's also right next to a window, which I open during day so they can get some natural light. (not sure if it makes a difference, but Holly seems to like it.)

Hmm, i would quarantine it and monitor faeces. If they are runny then it could be parasites but they can usually be treated cheaply if you suspect it, there's plenty of recommended treatments and dosages online

Okay, I put him in a large plastic bin, since I don't have another tank. I put a styrofoam bowl with a hole in there for a hide and a shallow ceramic dish in there for water. He immediately moved into the hide after I set him down.

Treat the frog and every few days disgard the styrofoam and disinfect and rinse the tank so it doesn't get reinfected

okay.
Have you tried giving them crickets? There was a time where my frogs wouldn't eat the mealworms I had set out so I switched them over to crickets.
