I've been having lots of fun playing with my new digital thermometer since I got it. One thing I was wondering though, is what temp do you generally go by? The ambient air temp in the room will often be quite a bit higher than Trevor's soil/body temp when I test that. The substrate generally stays around 75-77 regardless of what the room temp is (higher or lower).

Substrate can be cool like your substrate temp. You want the ambient air temp to be 80° to 85° during the day and 75° to 79° at night. The substrate should be slightly cooler than the air in the enclosure this way it effectively cools the frog when it burrows in. Naturally the substrate near the UTH will be a little warmer thus giving Trevor a choice of what temp she wants to be.
I follow ambient air temp since this is also how you will read the humidity levels. Where did you place the Gauge in the enclosure?
Yes, Trevor is the frog from my avatar. That was a baby picture though; she's about twice that size now
Okay, that's good. That's what I've been doing; the air temp is usually pretty hot compared to her substrate during the day, and about the same as her substrate at night. Like, today the ambient temp was 85 and her substrate was 75, and last night the ambient temp was 77 and her substrate was 76. She seems to like the cool side of her cage right now.
The thermometer I have is actually an infrared (it was very late when I wrote that... apparently I forget what type of equipment I have when I'm tired) There's no gauge, you just point it close to whatever you want to take the surface temp of. I've heard these can start getting inaccurate near the end of the battery life, so I'm keeping an eye on it.
