As long as her tanks humidity levels are fine then you shouldn't help her at all. she will remove it all by herself.

My frog tried to estivate and is currently soaking. How much if at all should I help her in removing the skin? Can I harm her by doing so?

I wouldn't mess with her. If the old skin is sticking to the new skin, pulling it off too quickly could cause issues.
